UK vs US cups and fluid ounces

A US cup is 240 ml. A UK/Australian cup is 250 ml — a small difference but it adds up in large batches. More significantly, a US fluid ounce is 29.57 ml while a UK fluid ounce is 28.41 ml. Always check which country a recipe originates from when using cups or fluid ounces.

Weighing vs measuring by volume

Professional bakers always weigh ingredients in grams rather than using cups or spoons. A cup of flour can weigh anywhere from 110g to 160g depending on whether it's sifted, spooned, or scooped. Weight is unambiguous; volume is not.

Teaspoons and tablespoons

In the UK, a teaspoon is 5 ml and a tablespoon is 15 ml. In Australia, a tablespoon is 20 ml. US teaspoons and tablespoons are the same as UK. When a recipe says 'a dessertspoon', it typically means 10 ml, halfway between the two.

Fan oven conversion

Fan-assisted (convection) ovens circulate hot air, cooking food more efficiently. As a rule, reduce the temperature by 20°C (about 35°F) compared to a conventional oven setting. Baking times may also be slightly shorter — check for doneness 5 minutes early.

Gas marks

Gas marks are a British system still used in many UK recipes. Gas Mark 4 = 180°C = 350°F, which is the most common baking temperature for cakes. Gas Mark 6 = 200°C = 400°F is typical for roasting vegetables. Gas Mark 8–9 is used for pizza and very hot roasts.

Ingredient densities vary

A cup of honey weighs 340g while a cup of flour weighs around 125g — both are 240 ml but differ wildly in weight because of their densities. The ingredient tab in this tool uses standardised density values; actual weights may vary slightly based on brand and conditions.

The tablespoon as a measurement was standardised at 15 ml by the metric system. Before standardisation, a tablespoon in cooking referred to an actual serving spoon from a table setting, which varied considerably in size between households.
